Aji sauce is on every Ecuadorian Restaurant’s table and on probably every Ecuadorian’s table. It is always on my table, because Leo and I love hot food. It is made in so many ways. Every restaurant’s aji is different. I have looked at what is in the ones I like and tried to recreate it. I like the one I came up with.
Put all of the these ingredients in a bowl and let sit a while and put it on rice or with the meat.
1/2 carrot diced small
1 onion diced small
1/2-1 tomato diced small
2 jalapeno peppers or any other kind of hot pepper diced small (I have even used the ones in a jar) **Note: seeds give the most heat, so use them or not depending on how hot you want it.
1/4 c water
2 T. of vinegar
1 t. or so of cilantro
1 t. salt
Taste and adjust ingredients to taste. Enjoy!
